Jambalaya

3 tablespoons veg oil
3 lb chicken (I use breasts, but a cut fryer would work well too)
1 lb smoked sausage or Kielbasa
1 cup chopped bell pepper
1 cup chopped onion
1 clove garlic, minced
3 cps chicken broth
2 teaspoons salt
2 teaspoons Worcestershire sauce
¼ teaspoon thyme
¼ teaspoon Tabasco sauce
¼ teaspoon pepper
1 ½ cup uncooked rice


Throw the chicken into a big pot half full of agua. Bring to a boil then down to a simmer for about 35 minutes. Remove chicken, cool and then shred from bone. Save the broth. Brown the sausage with the oil then remove from the pan, leaving the oil in. Saute' the green pepper, onion, and garlic on low heat for about five minutes. Add the seasonings and broth. Simmer 10 minutes. Add rice and meat. Cover and cook over low heat 25 minutes. Fluff rice with fork and cook 5 minutes longer, or until juices are absorbed by rice.

This is a nice, hearty comfort food. Something to keep you warm as the weather changes. I like to load it with additional hot sauce.
