I am not a fan of extruded foods. Siding, model airplanes, and screen doors canbe extruded. My deserts I prefer not to be extruded.

Looks to me like he thinly sliced some potatoes, tossed them with olive oil, and baked them at 400 degrees for 15 minutes.

There's your recipe.

I've been making sweet potato oven fries lately and danimal and the kids love them. It's great because sweet potatoes actually have nutritional value.
