I bought some poblano chilies the other day by mistake. What should I do with them?

Chile Relleno
Poblano is the Chile they use in Mexico. Hollow those suckers out, refill with cheese, batter 'em up, cook and call it a meal! You can fill them up with lots of stuff but cheese is the quickest/easiest. |
