I generally do chicken thigh meat with panang, but it is often done with beef. I wouldn't use potatoes with it, personally. Panang is typically prepared with meat, sauce, and not much else. But I like to throw in a few carrots, peas, and maybe some bamboo shoots.
The panang paste is usually a little too hot for my kids' tastes so we don't do it as much as masaman, green, or yellow curry.
