I think the vegetarian lifestyle is unhealthy
 
I've observed that vegens and vegetarians tend to be overweight. Also, if you go in their restaurants and bakeries there is an obsession with desserts--there is a huge selection, they are front and center, and the portions are huge. I think vegens and vegetarians compensate by loading up on carbs and sweets--not refined sugar, mind you, cane juice (as if it mattered).

Food for thought, anyway.

My wife was a vegetarian when we first married and she had been for seven years. She gradually became a carnivore and lost a bit of weight in the process. I think it was the reduction of carbs.

Interesting. I was a vegetarian for 6 years. I quit after I got pregnant with my son and really craved a burger. Once I lost all the baby weight, I maintained a weight approximately 5 pounds less than when I was a veg. But I always figured it had more to do with leaving the workforce and being at home where no one brings me donuts and no one keeps jars of candy on their desk.

Vegetarianism done right is healthier. My cousin is a vegetarian. She eats a lot of fresh fruits, veggies, whole grains and legumes. She is thin and fit. She likes her sweets but I don't think she overdoes it. I have a friend who is a vegetarian, but from what I can tell, she pretty much eats the same crappy, overly-processed American diet, just sans meat.

It takes a lot more effort to be a healthy vegetarian. A lot of vegetarians I know won't take the time to make something well-balanced and filling. They will grab fast food (sure, the tofu corn dogs might be more healthy than the real thing, but they are still processed) or some other handy processed food to eat.

I've tried to cook one veg meal a week, and I have a hard time coming up with a good variety. I have more success with incorporating a little meat, and filling the rest of the plate with veggies, grains, and legumes.

You know, I went vegetarian a year ago. I was curious about this "great feeling" you get that they claim only comes from a vegetarian lifestyle.

I can tell you with certainty that I have experienced and identified that "unique feeling"...it's called hunger.

We buy prepared meals delivered for 4-5 nights a week. Two or three of them are vegetarian. The lady really knows how to cook simple stuff well, so it's good, even though I normally prefer meat.

The meals are cheap. We figure not a whole lot more than if we went to Whole Foods grocery. Nothing elitist about curried vegetables with tofu.

Maybe if you count ordering at the drive-thru or picking up a pizza. Otherwise, I don't know any "middle class" people who have their meals regularly prepared by a chef.

However, Farrah is an excellent cook so Mike is probably eating just as well as you if not better.

I met a chef who has their own business delivering meals to clients. She says her clients are either celebrities, wealthy people who don't want to cook but want to eat at home, and two income households where both parents work long hours but want to eat healthy.

Y, I actually have a good lentil soup recipe, but you can post yours in case anyone else wants it. I have a hard time convincing Mike that soup is a meal. Also, everytime I cook a veg meal, he yells "Where is the meat?!"

Lentil Soup

1 ½ cup dried lentils soaked in salted water 30 minutes or overnight

In frying pan, sauté for 10 minutes over med heat
  • 1/3 cup Olive Oil
  • ½ cup chopped fresh garlic
  • 1 large white onion chopped
  • ½ cup red bell pepper chopped
  • ½ cup chopped celery
  • ½ cup chopped carrot
After 10 minutes, add 1 cup tomato sauce
Stir and sauté for five more minutes

Transfer to large 6 qt pan.

Add:
Rinsed and drained lentils
12 cups of water
3 packets of Goya ham flavoring packets (there are 5 or 6 packets in one box)
8 Chicken bullion cubes
3 dried bay leaves
1 large can of beef broth (a couple of normal size cans)

Optional (one of the following):
½ cup barley
½ cup white rice
2 peeled potatoes

Bring to a boil, reduce medium for 1 ½ hours.
