I love Super Bowl food.
This year I'm doing sweet pork nachos. Put a 2-lb. pork sirloin roast in the crock pot, along with 1 1/2 cup of Pace Picante Sauce (medium), 1 can of green chilis, and 1/2 cup of brown sugar. Cook it for 4 hours on high, then shred it with a couple of forks. Once it's shredded, leave it in the crock pot for another 1/2 hour or so on the warm setting. You can use the pork for salads, burritos, tacos, or nachos. It tastes a lot like the Cafe Rio style pork. I like to put it on nachos with cheese and black beans and then putting them in the oven for about 20 minutes to get the cheese melted and the Nachos warm and crisp. As Larry David would say, "Pretty, Pretty, Pretty, Good." |
